A delicious bar of organic Modica chocolate with mixed citrus peel.

Chocolate of Modica is a unique type of chocolate that has a special grainy, slightly crunchy and rough texture unlike normal chocolate. A chocolate that everyone must try, a chocolate in its purest form.

The history of Modica chocolate dates back to the 17th century when the Spanish, at the time, occupied Sicily and brought with them the cocoa bean from South America. This original method of chocolate production used a 'metate' where the cocoa bean was manually ground on a stone and sugar & spices were added. Fast forward to today and similar production methods still exist, where the chocolate is processed at cold temperatures (<45°C), the added cane sugar doesn't melt which gives the characteristic grainy texture and visible sugar crystals. This low temperature processing also means all of the beneficial properties of cocoa are kept intact. Furthermore, milk, emulsifiers, lecithins and cocoa butter fats are not added to give a pure chocolate taste and texture.

Chocolate from Modica is a PGI certified product that has to have a minimum of 60% cocoa mass in every bar. These bars are also certified organic and do not have the addition of flavourings or colourings, only ingredients from organic agricultural raw materials are used.

Modica chocolate comes in the traditional, characteristic, rectangular shaped ingot bar with four sections. 

Ciokarrua in Sicily, is the passionate company that produces these chocolate bars. They source their beans from South America which get delivered to their laboratory. They manual select and then roast the beans to perfection. This control over the roasting process gives the chocolate its unique flavour only made possible from the experience and skill of Ciokarrua.

Each item is scrutinised before being sent. We only send items that reach our quality standards. Wooden items, such as handles, might feel a bit rough from the manufacturer. Our team in the UK hand sand some of these items to make sure the item is at its best.

We hand wrap delicate items before sending them to you to ensure they are protected and reach you in perfect condition. We don't believe in excessive packaging and believe the tools speak for themselves.

We hope to do our bit for the environment and reduce plastic waste. Most of our packaging is paper based and is non-laminated, which can be easily recycled or composted at home.

We aim to reuse materials and packaging where possible and this is usually the only plastic you will find in your parcel. This plastic protection can also be recycled.
